Why AMD ? – AMD can do more at low price than Intel. Of course Intel would help in overclocking but the budget at which we want to build our pc is more in favor of AMD as it will give us more speed than Intel at the same price.
Why G. Skill and Two sticks of 1 GB memory ?
G. Skill is just about Rs. 100 more than regular kingston but G. Skill is more efficient performance-wise. 2 sticks of 1 gb each is better than 1 stick of 2 GB because the former would enable dual channel memory configuration.
Why Hitachi ?
Its reported that seagate 500 GB is giving problems while WD is about rs 300 more than Hitachi. Overall Hitachi has been reported to perform well without problems as for now.

Could you suggest what is the best combo – of Processaor / Motherboard / RAM / HD – for PERFORMANCE (except gaming which i am not interested in) if price is not a barrier ?
Basically i want my PC to be really fast (subject to internet speeds of the ISP of course)

Just get quad core genuine intel processor alongwith compatible asus mobo. HD and RAM as per ur requirement. RAM must be of 800MHZ.
